Super Bowl Bourbon Blondies

We’re a month out from what’s seen as the “major” holidays. But before we can kick our feet up and not worry about social obligations and eating massive plates of food, Super Bowl is right around the corner to start a new round of Holidays and social engagements.

Ahh Super Bowl. A reason to eat meat and cheese all day while yelling at the tv. It is reported that Super Bowl is the second biggest eating holiday only behind Thanksgiving. That’s saying something. We are SERIOUS about our football. I also know that we are serious about our food. I know my fiancee loves it because its an excuse to eat chicken wings all day and not a single vegetable while watching his favorite sport. Besides watching the game and eating chicken wings, dessert is one of my favorite things about the day. But what kind of dessert do you have at a Super Bowl party? Is there a dessert you have to make for Super Bowl the way Black people have to make Sweet Potato Pie for Thanksgiving?

Well I’ve done the research for you and the answer is no. I mean there are cute football brownies and there are cupcakes and rice krispy treats, but nothing that screams Super Bowl; nothing that is distinct for a Super Bowl party. So if I was hosting a party or if I had to bring dessert to one, what would I bring? I make cookies all the time, because lets face it- they are easy and I can get a lot of cookies out of one batch. I mean 3 to 4 dozen per batch of cookies? That’s a winner when you need a quick party dessert. But I wanted to come up with something a little different and that I had never made before. Ironically enough, blondies came up on my Super Bowl Dessert search. I’ve always heard of them, but never made them. I mean I love a good brownie so I was never really looking for a brownie without chocolate. But in my quest for something different, I decided to give these a go. I looked up several recipes, and created what I thought would be a good ratio and mix of ingredients and set forth testing my recipe. First times a charm because they were so good! And yes I thought it was good enough to have warmed up with ice cream on top. Don’t judge because I added extra calories to my dessert. Anyway I took these regular blondies up a notch by adding in bourbon, toffee, dark chocolate and sea salt. Whew! I know its a lot of add ins, but I’m currently in love with adding bourbon, toffee and various chocolates into desserts. And all of those add ins seem appropriate for an event with mixed company- bourbon for the guys and “healthy” dark chocolate for the ladies; the subtle flavor of the bourbon with the saltiness, plus sweet toffee and slightly bitter dark chocolate…mmm mmm.

Salted Bourbon Blondies


Servings:16

Prep Time: 15 minutes

Cook Time: 20-25 minutes

Ingredients

1 stick of butter, browned

1 cup light brown sugar

1 cold egg

2 tsp. vanilla

1 cup + 1/2 tablespoon flour

1/8 cup bourbon

1/2 cup toffee chips

1/2 cup dark chocolate chips

1/4 teaspoon sea salt

Maldon sea salt flakes

Directions

1. Preheat your oven to 325 F. Line an 8 or 9 inch square pan with parchment paper.

2. Add your browned butter and brown sugar to the bowl of a stand mixer. Whisk until combined. Then whisk in the egg, vanilla and sea salt.

3. With a spatula or wooden spoon add the bourbon, flour, toffee, and chocolate chips.

4. Batter will be thick, but add to the prepared pan and cook for 20 to 25 minutes or until a toothpick comes out almost clean. Sprinkle with Sea Salt Flakes.

5. Cool about 10 minutes in the pan, then, using the parchment paper as a sling, remove the blondies from the pan and allow to cool completely. Cut into 16 squares.
